Rosemary-Garlic Roasted Chicken

1 (5 to 6 lb.) roasting chicken
1 tbsp. chopped fresh rosemary
8 cloves garlic, crushed
2 md. red onions, quartered
2 heads garlic
2 tsp. olive oil
Preheat oven to 450°F. Remove and discard giblets and neck from chicken. Rinse chicken under cold water; pat dry. Trim excess fat. Starting at neck cavity, loosen skin from breast and drumsticks by inserting fingers and gently pushing fingers between the skin and meat. Place rosemary and crushed garlic beneath skin of breast and drumsticks. Lift wing tips up and over back; tuck under chicken. Place chicken, breast side up, on a broiler pan.

Linguine with Clam Sauce

12 oz Linguine pasta
2 tb Olive oil
1 lg Clove garlic,minced
1 sm Onion, finely chopped
1 10 oz can minced clams
1/4 c Chopped parsley
1 tb Lemon juice
1 ds Hot pepper sauce
Grated Parmesan cheese to taste
Cook linguine according to package directions, making sure that it is not overcooked. While pasta cooks, heat oil in a skillet. Saute garlic and onions until soft but not browned. Add clams with liquid, parsley, lemon juice and hot pepper sauce. Heat through. Drain linguine; place on a platter and pour clam sauce over it. Sprinkle with Parmesan cheese, as desired. Yields 2 servings.

Sesame Noodles with Shrimp and Peppers

1 lb. Vermicelli or Thin Spaghetti or other long pasta shape
3 tbsp. oil
4 cloves garlic, minced
30 large shrimp, shelled and deveined
2 medium bell peppers (1 red and 1 yellow), cut into strips
salt and freshly ground pepper

Cod Fish Cakes

1 lb of cod fillets
2 medium-sized russett potatoes
1 cup bread crumbs
1/4 cup chopped fresh parsley
2 Tbsp freshly grated Parmesan cheese
2 garlic cloves, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
2 eggs, lightly beaten
grapeseed oil for frying
Boil and mash the potatoes, set them aside. Boil the codfish until it flakes easkly. Drain and flake the fish with a fork. Be sure to remove all bones. Mix the flaked fish, the potatoes and the rest of the ingredients together well by hand. If the mixture is too crumbly, add another egg. If too sticky, add some more bread crumbs. Form the mixture into cakes and fry them on medium high heat in a saute pan with oil.Makes 12 fish cakes.
