Twice Baked Outdoor BBQ Baby Potatoes

2 lbs baby potatoes, pre-cooked 
butter 
sea salt 
fresh ground black pepper 
If you need to par-boil these potatoes first, place them in a large pan of boiling water and cook for about 5 to 8 minutes. Do NOT peel them, but scrub them if necessary and cut any protruding eyes out.
Drain them well and place them straight on to the BBQ grill/shelf, moving them around all the time with heatproof tongs.

Dundee Biscuits

2oz caster/superfine sugar
1 egg, separated
2oz flaked almonds, chopped
Put the flour into a bowl and rub in the butter until the mixture resembles fine breadcrumbs.

Stuffed Cinnamon Apples

3 oz. pkg. cream cheese
2 tbsp. milk
1 tsp. lemon juice
1/3 cup pitted dates, chopped
1 small can crushed pineapple, drained
2 tbsp. chopped walnuts

Butternut Squash Fries

1 (2 pound) butternut squash, halved and seeded
salt to taste
Preheat the oven to 425 degrees F (220 degrees C).
Use a sharp knife to carefully cut away the peel from the squash. Cut the squash into sticks like French fries. Arrange squash pieces on a baking sheet and season with salt.
Bake for 20 minutes in the preheated oven, turning the fries over halfway through baking. Fries are done when they are starting to brown on the edges and become crispy.

Banana Crumb Muffins

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
 
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

Roasted Asparagus

1 lb Fresh asparagus
2 ts Olive oil
2 tb Parmesan cheese, shredded
1 Lemon, cut into wedges

Arrange in a single layer in a shallow baking pan. With a pastry brush, paint the oil on the asparagus spears then sprinkle with kosher salt. Roast until tender but still crisp, 8 to 10 minutes, depending on thickness of stalks. Turn spears occasionally for even cooking and to avoid browning. Place asparagus spears on serving platter. Sprinkle with cheese. Serve with lemon wedges.

Appetizer Puffs

1 cup water
1 cup sifted flour
1/2 tsp. salt
4 eggs at room temperature
1/2 cup butter (1 stick)

Bring water to boil with salt and butter. As soon as butter melts and water is full boil, add flour all at once and stir rapidly. Remove from heat as soon as mixture holds together and looks like cornmeal mush. Add eggs, one at a time, beating well after each addition. Drop by half tsps. onto cookie sheet. Allow for expansion. Place in a 400° oven for 15 minutes or until golden and crisp. Make slit in puff or cut off top to allow steam to escape. Cool on racks and fill. Temperature: 400°. Baking Time: 15minutes.
