Fennel & Apple Salad
3 cups Granny Smith apples — julienne-cut
3 cups Red Delicious apples — julienne-cut
1 cup julienne-cut fennel bulb
1/2 cup finely shredded carrot
1/2 cup sliced green onions
2 tablespoons water
2 tablespoons white wine vinegar
4 teaspoons vegetable oil
1 teaspoon sugar
1/2 teaspoon salt
fennel fronds, chopped — (optional)
Combine first 5 ingredients in a medium bowl; toss well. Combine water, vinegar, oil, sugar and salt in a small bowl; stir with whisk until blended. Add to fennel mixture; toss gently to coat. Cover and chill. Garnish with fennel fronds, if desired. Yields 8 servings. serving size – 1 cup.
