French Cheese Pastries

2-1/4 cups all purpose flour
1-1/4 tsp. salt
3/4 cup vegetable shortening
1/4 cup plus 1 Tbs. cold water
3 Tbs. unsalted butter
1 cup milk
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
Preheat oven to 450°F. Combine 2 cups flour and 1 tsp. salt in a food processor or bowl. Cut in shortening until mixture resembles coarse meal. Add water and process briefly until mixtures forms a ball. Transfer pastry to a lightly floured work surface. Cut dough in 2 pieces and roll out each piece to about an 8×12 inch rectangle. Arrange 1 piece in the bottom of a baking dish and set aside.
Melt butter in a saucepan over medium heat. Stir in remaining 1/4 cup flour and remaining salt. When mixture is combined, whisk in milk until smooth and thick. Stir in cheddar cheese. When cheese is melted, pour over pastry in baking dish to cover. Arrange remaining pastry over top, pinching edges down to seal. Sprinkle with Parmesan and bake 20-25 minutes or until golden. Remove from oven. Let stand 10 minutes before cutting into small squares. This recipe serves 12 people.
