Dundee Biscuits

8oz plain/all purpose flour
4oz butter
2oz caster/superfine sugar
1 egg, separated
2oz flaked almonds, chopped
Put the flour into a bowl and rub in the butter until the mixture resembles fine breadcrumbs.
Stir in the sugar and mix well, then stir in the egg yolk.
Knead lightly.
Roll out on a lightly floured surface or board until about 1/4 inch thick.
Prick with a fork, and then cut out 2 inch rounds.
Place the rounds on a baking trays.
Brush with the egg white and sprinkle with the almonds.
Bake in a preheated oven temperature 325oF/170oC/gas mark 3 for 25 - 30 minutes.
The biscuits should be a pale golden brown colour.
