Kentucky Biscuits
Ingredients
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 dash salt
1 tablespoon white sugar
1/2 cup butter
3/4 cup buttermilk
Double Tomato Bruschetta
6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 French baguette
2 cups shredded mozzarella cheese
Olive Bread
1-1/4 cups water
4 cups flour
1-1/2 tsp. salt
1 tbsp. sugar
1 tbsp. dry yeast
1 tsp. garlic powder
1 tbsp. dried onion chips
3 oz. black olives
2 oz. green olives
1/2 cup shredded Parmesan cheese
Pita Bread
1 package active dry yeast, or equivalent
1 1/4 cup warm water
3 cups flour – or use wheat flour
2 tsp salt
Flour Tortillas
4 cups unbleached all purpose flour
2 teaspoons salt
4 teaspoons baking powder
2 tablespoons vegetable shortening
1 1/2 cups warm water (or more if needed)
Italian Cheese Bread
2 1/4 oz pkgs dry yeast
1 cup margarine
6 large eggs
4 1/2 cups all-purpose flour — sifted
1 teaspoon salt
2 teaspoons sugar
1/4 pound Swiss cheese
1/4 pound sharp cheddar cheese
1/2 cup Parmesan cheese — grated
Dissolve yeast in 1 cup of warm water. In a large mixing bowl, beat margarine until fluffy. Beat eggs in another bowl until light. Add eggs to margarine, blending well. Stir in dissolved yeast water. Sift flour, salt and sugar together. Gradually add to egg mixture, continue to beat until satiny.
Basic Pizza Dough
1 cup warm water
1 package active dry yeast
2 1/2 to 3 cups all-purpose flour
2 tablespoons olive oil
1/2 teaspoon salt
Challah Bread
2 1/2 cups warm water (110 F)
1 tablespoon active dry yeast
1/2 cup honey
4 tablespoons vegetable oil
3 eggs
1 tablespoon salt
8 cups unbleached all-purpose flour
1 tablespoon poppy seeds (optional)
Irish Brown Bread
12oz wholemeal flour
4oz white flour
1 tbsp wheatgerm
1 level tsp bicarbonate of soda
1 tsp salt
1 egg, beaten
1/2 pint buttermilk
Indian Fry Bread
3 cups flour
1 tbsp baking powder
1/2 tsp salt
1 cup warm water
(raisins optional)
Combine dry ingredients in a bowl. Add warm water in small amounts and knead dough until soft but not sticky. Adjust flour or water as needed. Cover bowl and let stand about 15 minutes. Pull off pieces of dough (size of eggs) and roll out into thin rounds. fry rounds in hot oil until bubbles appear on the dough, turn over and fry on the other side until golden. serve hot with honey brushed on top.
